Our Heritage
Maqam was born from a reverence for Arabic culinary tradition — the slow-cooked lamb of the Nejd, the fragrant rice of the Hejaz, the delicate sweets of the Levant. Every dish carries the memory of a grandmother's kitchen, elevated to an experience worthy of the finest dining rooms.
Our chefs travel across the Arab world to source heirloom ingredients: hand-harvested saffron from Al-Qassim, slow-fermented rosewater from Taif, aged ghee passed down through generations.
